My very first blog post! And a gluten-free pancake recipe:)

Well hello there all you friends, recipe enthusiasts, food blog lovers, or just bored internet explorers! I personally welcome you to my very first post as a food blogger.
So I will just come right out and say it. I am a hopeless pancake addict. I have not found a pancake I didn’t absolutely love, as of yet. I make pancakes almost every single week, at least once a week. I decided to try a very different recipe than my usual types and, my oh my, was it delicious!
Somehow, without any egg, they held together AND tasted slightly sweet without the tiniest pinch of sugar. Impossible you say? NO!
Granted they are not sky high fluffy, but I actually really like that about these pancakes. It makes them the perfect platform for pouring scrumptious toppings on top.

Gluten-free Pancakes
Makes 12-14 small pancakes

Ingredients:
-1/4 cup brown rice flour
-2 tablespoons coconut flour
-1 tsp chia seeds
-3/4 cup unsweetened almond milk
-1/2 teaspoon baking powder
-Large sprinkle of ground cinnamon

Directions:
1. Mix the brown rice flour, coconut flour, baking powder, chia seeds, and cinnamon in a bowl. Then add the unsweetened almond milk and stir until completely combined
2. Let the pancake batter sit for at least 5 minutes.
*if the batter is to thin, add a little coconut flour*
3. When that, excruciating, 5 minutes is up heat a pan over medium heat.
4. Spray with cooking spray and pour spoonfuls of pancake batter onto the pan.
5. They may make little popping noises. DON’T BE ALARMED. My pancakes did that too and they were perfect!
6. When golden brown and dry looking on the top, flip them until firm.
7. Repeat this process until the pancake batter has transformed into pancakes.
8. Now top those babies with pure maple syrup, honey, any type of fruit, or any other topping you enjoy!

 

When I finished up cooking the last one, I set five on my plate and topped them with some fresh strawberries and homegrown bananas. I, of course, ate every little speck on my plate, got my bag and had every intention of walking out the door to go on my merry way…when those little, perfect, magical pancakes sat there staring at me with their delicious pancake-ness begging me to eat them. Well, who was I to turn them down…so yes, I ate all of the pancakes in a single 30 minute time span. Don’t judge me.
Make them for yourself and you’ll see why I couldn’t resist the utter deliciousness. I savored every single bite.

*WARNING* You may eat all of them in one sitting, make sure you’re not the only one around when making them. On second thought, they’re made from good, whole ingredients, so you go right ahead and devour them all!
