So I have a MAJOR sweet tooth. And I crave said sweets, oh so conveniently, right before I go to bed. The images of monstrous chocolate cake slices, soft ball sized sprinkle sugar cookies, and huge pumpkin swirl brownie muffins, parade across my closed eyelids.
With that image before you, you may realize why I was in dire need of a quick, healthy, and super easy dessert recipe to allow my mind to succumb to the should-be-normal sleep patterns.
I’m sure glad the microwave was invented. Maybe Percy Spencer (fun fact: Percy Spencer invented the microwave) was plagued with a similar problem of sweet-tooth-mania…
If you have a microwave, a mug, some oats, an egg, and a very ripe banana, you are golden!
Of course you can add other things to liven it up, but if it’s 11:30 at night and you’re hankerin’ for a sweet little muffin you may just want to stick with simplicity.
Minute Magic Muffin
-1/2 very ripe banana, mashed
-1 egg white
-3 tablespoons quick oats
-Sprinkle of cinnamon
-Unsweetened Cocao nibs or Chocolate chips (soy lecithin free)
-Any type of fruit, diced
*My muffin is topped with a quick chocolate peanut butter sauce!
1. Spray your mug with non stick cooking spray.
2. Mash the banana. Pour the oats into the mug and combine with the banana and egg white.
3. Mix well and add in any other ingredients you desire.
4. Pop it in the microwave for a minute to a minute and 30 seconds and voila!
5. Enjoy it with a spoon, straight out of the mug (who likes extra dishes, anyway?)
I usually just mash a whole banana, use a whole egg, and 1/4 cup + 1 tablespoon of oats which makes two muffins. You can eat both right there (judgement free zone! and it has good stuff in there, so chill) or just save the other one for tomorrow.
It does take more than a minute including the prep work, but it should still take you less than three minutes to get it prepped, cooked, and ready for scoop-ability. And you better not feel a single pang of guilt over this amazing muffin because all the ingredients are good for you. You should actually pat yourself on the back..your body doesn’t have to know it’s healthy 😉

They keep our cholesterol levels in check due to a type of fat, sterols, which block the absorption dietary cholesterol. They can also relieve symptoms from acid reflux and heartburn!
Ever wonder why a lot of athletes eat a banana after their workout? It’s because it keeps energy levels up due to the natural sugar and fiber, and it also prevents/relieves muscle cramps. They are also a fantastic source of free radical fighting antioxidants, Vitamin B6, manganese, Vitamin C, biotin, and copper. Bananas also contain Tryptophan, a naturally occurring mood enhancer, which may help to relieve Seasonal Affective Disorder or just turn your day around.
